Creamy Punjabi Sweet Lassi – Indian Yogurt Drink

If you are a Punjabi, then this is not new for you. Punjab is known for its “Makke ki Roti”, “Sarson da Saag” and “Punjabi Sweet Lassi”. And if you have had this meal, then you would agree that nothing compares to it. This is something that I have desperately missed since I moved from Delhi. I haven’t found a lot of restaurants in Bangalore that serve genuine North Indian. And at least there were no restaurants that served good Makke ki Roti and Sarson da Saag.

Lassi has no seasons. It tastes simply amazing in Summers but, whenever I make parathas I ensure that I make Lassi. I remember one of my trips to Chandigarh, when I was staying in Delhi. On the way there was a place called “Murthal” where you would get Yummy Parathas served with white butter and a Big glass full of Lassi. That was one trip that I would never forget. If you are not an Indian and you ever get a chance to visit Delhi, then I would recommend that you surely visit Chandigarh. It is known for its “Rock Garden” and “Rose Garden”.

But I have heard that “Murthal” is no longer the place it used to be. So you might want to ensure you have gathered enough information before you decide to stop over there.

So let us get onto our recipe for today – Punjabi Lassi.

Ingredients

  • Chilled Thick Curd (Yogurt) – 1.5 cups
  • Sugar – 2 tbsp
  • Chilled Milk – 1/8 cup
  • Crushed ice – 2 cubes
  • Cardamom powder – 1/4 tsp
  • Rose Essence – 1/4 tsp (optional)

Method

  1. Add curd in a bowl and beat it well , then add milk and crushed ice.
  2. Add cardamom powder,rose essence and mix well.
  3. Beat it until frothy or just blend it in a mixer. (Do not over blend)
  4. Pour lassi in a glass and top it with malai, cashew, raisin and serve chilled.
